Millet Meal Tabouleh


  • 1 cup of millet
  • 3 cups of water
  • 1 cucumber, pealed and chopped
  • 3 tomatoes - chopped into pieces
  • 1/2 yellow capsicum - chopped into pieces
  • 1 cup of chopped parsley
  • 1/2 cup of fresh mint roughly chopped


  • 1 1/2 tsp Dijon Mustard
  • 1 1/2 tsp Organic Coconut Palm Sugar (or sugar substitute)
  • 1/3 cup Biogenic Organic Apple Cider Vinegar
  • 1/3 cup Olive Oil
  • 1/2 clove chopped garlic

  1. Prepare the Millet Meal by adding 1 cup of the millet to 3 cups of water. Bring the boil and simmer for approx. 20-25 minutes until the water has been absorbed and the millet is fluffy. Allow to cool.
  2. Gentle combine all the ingredients
  3. Carefully fold in the cooked millet meal


Combine all ingredients and whisk. Drizzle over the tabbouleh


Millet meal is quite versatile. It makes a lovely porridge but it can also be used in baked goods and in tabouleh. It has a subtle flavour and has lots of vitamins and minerals.
